Barbara’s Puffins Muffins
Take your Puffins love to the next level – crushed Cinnamon Puffins muffins – they’ll add some extra joy to your day!
Ingredients:
1¼ cups unbleached or whole wheat pastry flour
1½ tsp. baking powder (unsulphured)
½ tsp. baking soda
½ tsp. sea salt
½ cup granulated sugar
1 cup Barbara’s Puffins Cereal (Original or Cinnamon), finely crushed (start with about 2 ¾ cups whole cereal)
¼ cup canola oil
¼ cup honey
1 cup milk or milk substitute
2 large eggs at room temperature
Directions:
Preheat oven to 400° F.
Line a 12-cup muffin tin with paper muffin cups. Mix together flour, baking powder, baking soda, salt. Add sugar and crushed Puffins (if desired, add ¾ cup nuts or raisins). In separate bowl, mix oil, honey, eggs and milk until well blended. Add to dry ingredients, blending with wooden spoon until combined. Do not over mix. Fill muffin cups to ¾ full and bake for 18 to 20 minutes.
